Job Description

SUMMARY:

Assist in the work of the pastry operation to include: the preparation and production of all pastry, bread and dessert items for the Casino restaurants and Team Member dining area. Experience in a high volume bakery or pastry shop is preferred. The ability to decorate and finish cakes for presentation to our guest is also highly recommended.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following:

* Preparation of cream, icings, mousses, sauces and production of pastry products.

* Assemble all cakes, pastries, cookies, pies, hot and cold desserts and ensure that all a la carte dessert orders and amenity orders are completed.

* Monitor all finished products for quality and quantity Ensure that all items are correctly marked and delivered to the correct area or restaurant in a timely manner.

* Ensure that all food items are prepared and served according to the Executive Pastry Chef’s standards, specifications, and recipes.

* Ensure daily organization and cleanliness within work area.

* Assist with proper storage of all food; rotation, labeling and dating all products.

* Assist with ensuring that pastry operation meets all Health Departments requirements for sanitation, such as proper rotation of food and daily cleaning of icebox, walk-ins and refrigerators. Proper temperatures of walk-in and freezer are maintained.

* Responsible for maintaining a consistent, regular attendance record.

* Other duties as assigned by Executive Pastry Chef and Pastry Chef.

* Performs other duties as requested such as moving supplies and equipment cleaning to ensure a safe working environment.

QUALIFICATION REQUIREMENTS:

EDUCATION and/or EXPERIENCE:

High School Diploma/GED preferred. Minimum two to four years of pastry/ baking in similar size operations required. Must possess working knowledge of the fundamentals of baking and pastry preparation, accepted standards of sanitation and operation of all kitchen equipment.

SPECIAL QUALIFICATIONS:

Ability to obtain any required licenses or certificates.
LANGUAGE SKILLS:

Possess the ability to comprehend and communicate effectively in English both written and orally. Ability to respond to common inquiries or complaints from Vendors or Team Members of the casino.

MATHEMATICAL SKILLS:

Basic mathematical skills sufficient to understand recipes, measurements, requisition amounts and portion sizes is required.

REASONING ABILITY:

Ability to apply commonsense understanding to carry out a variety of instructions furnished in oral, written or diagram form.

PHYSICAL DEMANDS:

While performing the duties of this job, the Team Member is regularly required to talk or hear. Must be able to work in confined places and at extreme temperatures. Must have the ability to stand, reach, stoop, in order to perform the essential functions. Sufficient manual dexterity in order to use all kitchen equipment such as knives, spoons, spatulas, tongs and slicers is necessary.

Must be able to lift up to 50 pounds. Must be able to push and pull carts weighing up to 200 pounds.
