Job Title:   Restaurant Prep Cook

Job Duties and Responsibilities:
(Note: Duties and responsibilities may be added, deleted, or changed at the sole discretion of Sycuan Management at any time)
1.     Provides kitchen with food products by cutting, slicing, chopping and cleaning vegetables and proteins, preparing food product according to production sheets, and portioning food items as instructed. - 40%
2.     Maintains a safe and sanitary cooking area by checking the temperature and freshness of food, rotating food items as needed, and cooling and storing food product according to established procedures. - 30%
3.     Maintains clean and orderly walk in and storage areas by arranging and straightening equipment, labeling and dating food products, wiping shelves and counters, disposing of empty cartons, boxes and trash, and sweeping and mopping storage area floors. -10%
4.     Maintains a safe and sanitary kitchen by organizing soiled pots and pans, cleaning counters, shelves, walls, ceilings, and equipment, sweeping, mopping floors, placing caution signs on wet floors and in hazardous areas, empting trash cans, breaking down boxes, and disposing of trash according to established procedures. - 10%
5.     Assists Chefs, Sous Chefs and Cooks by completing assigned tasks as needed. - 10%
Job Specifications:
Skills and Knowledge:
  • Working knowledge of cooking temperature guidelines
  • Ability to safely use knifes
  • Ability to prepare menu items from recipes
  • Ability to perform mathematical equations
  • Ability to lift up to 50 lbs
  • Ability to stand for up to eight hours at a time
  • Ability to bend and stoop
  • Ability to interact effectively with guests and team members
  • Ability to communicate effectively in the English language
  • Ability to understand and follow verbal directives and written directions
  • Ability to accept constructive criticism
  • Ability to appear for work on time
  • Multi-lingual

Job Specifications:
Education and Experience:
  • Current food handler card
  • 1 years cooking experience in a high volume commercial kitchen 
  • High School Diploma or G.E.D.
  • Culinary degree
