Summary: Maintain the cleanliness of the dining room ensuring a neat and sanitary place for guests to                     dine in.

Essential Job Functions:

  • Resets tables according to specifications of the restaurant.
  • Removes plates and silverware when all guests have finished.
  • Maintains cleanliness of tables during service to amplify customer perception.
  • Sets up and breaks down dining room for each shift.
  • Maintains service stations in a clean and orderly manner throughout shift.
  • Performs all opening and closing side work as required.
  • Takes breaks only when approved by the General Manager- Hugo’s, Assistant General Manager- Hugo’s or Restaurant Manager-Hugo’s.
  • Follows company and equipment standards.
  • Maintains cleanliness of dining room walls and shelves and cleanliness of overall dining room.
  • Assists wait staff in carrying trays and bringing food to tables.
  • Keeps a clean and professional appearance at all times.
  • Performs all other duties as assigned.



  • Must be 18 years or older.
  • High school diploma or equivalent.
  • Must be available to work flexible shifts, weekends and holidays.
  • Ability to obtain and maintain all necessary licensing.   


Physical and Mental Demands:

  • Regularly required to see, talk and hear; use hands to finger, handle, or feel and reach with hands and arms.
  • Ability to effectively communicate verbally with customers and other staff in a fast-paced environment.
  • Must occasionally lift and/or move up to 50 pounds. 
  • Able to work with others while maintaining a positive and professional demeanor. 
  • Regularly required to stoop or kneel and stand for long periods of time.
  • Regularly required to move with a sense of urgency, including pivoting and shuffling.
