Job Description

Turning Stone Resort Casino is opening a new Sushi dining option, please come roll with us into this new venture as our Sushi Chef! 

 Duties and Responsibilities:

  • Works assigned station on the sushi bar preparing Maki to order and during slower periods will be preparing Nigari and Sashimi.
  • Must adhere to all policies, procedures, standards, specifications, guidelines and training programs.
  • Responsible for preparing various types of sushi dishes according to established specifications on quality, portion size, presentation and food safety.
  • Must be compliant with all healthy and sanitation codes.
  • Effectively slices and prepare all orders made.
  • Must have a detailed knowledge of the menu and be able to explain to our guests all offerings in the sushi case including the characteristics of the fish, flavor profile and origin.
  • Effectively upsell more varieties of rolls, Nigari and Saki.
  • Responsible for keeping Sushi bar and stations in pristine condition at all times.
  • Must be able to do proper cutting, slicing and filleting different types of fish.
  • Responsible for monitoring quality of products and services in the absence of the Sushi Chef.
  • Effectively maintains and delivers a consistent artistic presentation not deviating from our policies and specs.
  • Must possess outstanding guest service skills.
  • Must be able to work different days, including nights, weekends and holidays.

Job Requirements

  • High School diploma or GED equivalent required.
  • Minimum one year experience in sushi restaurant or retail.
  • Possess food hygiene and safety certification preferable serve safe certified or can acquire certification.
  • Effectively communicate clearly and professionally while listening to others.
  • Must have a well-groomed, professional appearance.
  • Ability to work under pressure while maintaining a friendly composure.
  • Must have sound knowledge of food safety regulations specifically fish and shellfish and pH measures.
