Job Description

  • Demonstrates a thorough understanding of sanitation procedures which are consistently applied and ensures that those procedures are followed by other employees.
  • Understands the importance of proper food handling procedures and ensures that HACCP procedures are always followed.
  • Continually demonstrates the ability to instruct less knowledgeable employees on properly use kitchen equipment while ensuring the highest safety standards.
  • Always follows all approved recipes while ensuring proper cooking techniques and the highest quality standards.
  • Instructs less knowledgeable employees in the use of recipes and consistent food item production.
  • Ensures that foods are maintained at necessary temperatures and those not in necessary ranges are properly corrected or discarded.
  • Monitors the temperature of food storage boxes/areas for temperature compliance and reports any problems to the Manager/Supervisor.
  • Always properly identifies and stores products and takes an active role in quality control of all food items.
  • Continually demonstrates the ability to produce food orders in a timely, neat and organized manner according to the needs of the guest.
  • Familiar with all product/inventory in freezers and coolers and assists in ensuring that all product/inventory is properly rotated to maintain freshness.
  • Keeps work station organized and produces required quantity according to demands of station.
  • Always demonstrates the ability to apply advanced cooking techniques in order to produce creative food dishes (i.e. knife skills, carving skills, basic mother sauces, etc.).

Job Requirements

  • High School Diploma or Equivalent.  Associates degree in a related field or culinary degree preferred. A combination of education and experience may be considered.
  • Must possess a minimum of 2-3 years related experience.
  • Must be able to operate a steamer, fryer, oven, etc.
  • Must possess a valid NYS Drivers license; transport needed equipment.
  • Ability to be safety oriented.
  • Must be able to work in a fast paced environment and multi task.
  • Ability to accommodate a flexible work schedule to include nights, holidays and weekends.

 

Position Physical Requirements:

  • Must be able to lift up to 75 pounds.
  • Must be able to stand for long periods of time.
