Culinary Externship

Job Description

  • Demonstrates an understanding of assisting in controlling product costs by ensuring the proper management of product waste.  Attempts to control food costs; throw away, etc.
  • Demonstrates a thorough understanding of sanitation procedures and consistently applies such.
  • Understands the importance of proper food handling procedures and ensures that procedures are always followed.
  • Assists in maintaining the overall cleanliness and appearance of the kitchen and bakery areas.
  • Demonstrates the ability to properly use kitchen equipment while ensuring the highest safety standards.
  • Always follows all approved recipes while ensuring proper cooking techniques and the highest quality standards are upheld.
  • Always properly identifies and stores product specific to outlet and always takes an active role in quality control of all food items.
  • Continually demonstrates the ability to produce food orders in a timely, neat and organized manner according to the needs of the guest.
  • Is always familiar with all product/inventory in freezers and coolers, and assists in ensuring that all product/inventory are properly rotated to maintain freshness.
  • Ensures that all hand skill techniques involving specific culinary utensils (knives, peeler, etc.) are applied while consistently following documented safety standards.
  • Continually demonstrates the ability to keep work station organized and produce required quantity according to demands of station.  Continually identifies, utilizes and builds knowledge base of specific culinary terms and duties per assigned outlet (i.e. grilling, dicing, etc.).  
  • Ability to convert and proportion recipes to suit product requirements.

Job Requirements

  • High School Diploma or High School Equivalency required.
  • Must possess reading ability; schedules, menus, etc.
  • Must possess mathematical ability; measuring, etc.
  • Must be able to operate a steamer, fryer, oven, etc.
  • Must possess written communication skills; standard communication, complete forms, etc.
  • Must be able to work a flexible schedule to include nights, holidays and weekends.
  • Ability to organize and complete multiple tasks.
  • Ability to work in a fast paced environment essential.

 
Physical Requirements:

  • Must be able to stand for long periods of time.
  • Position requires constant bending, pushing, pulling, kneeling, standing, walking, simple grasping, manual dexterity, reaching over the shoulder and twisting.
  • Must be able to constantly lift up to 50 lbs.
