JOB DESCRIPTION:
JOB SUMMARY
Oversee all aspects of kitchen production, food quality, hiring and training of staff, implement new menu when needed, maintain budgeted food and labor costs.
 
ESSENTIAL DUTIES AND RESPONSIBILITIES
  • Maintain budgeted food and labor costs.
  • Work with purchasing to insure food quality and costs.
  • Maintain kitchen sanitation.
  • Create food specials and new menus as requested.
  • Comply with all company policies and procedures.
  • Attend monthly staff meetings and oversee scheduling of staff.
  • Other duties may be assigned.

JOB REQUIREMENTS:
SUPERVISORY RESPONSIBILITIES
Supervisory authority over entire BOH.
 
QUALIFICATIONS
Ability to communicate effectively both orally and in writing. Ability to lead and effectively direct others. Must be competent with various PC based software programs. Knowledge of methods, principles and practices of Food and Beverage. Knowledge of general office practices and procedures and operating standard office equipment. Ability to exercise independent judgment. Ability to develop and maintain a pleasant and effective working relationship with guests and staff.  
 
EDUCATION AND EXPERIENCE
High school diploma and graduate of culinary school. Minimum five (5) years experience as Executive Chef in a high volume multi-unit operation. Casino-Resort experience preferred.
