JOB DESCRIPTION:
Maintain proper inventory levels of wines, other beverages and supplies.
Direct and engage in wine service during restaurant service hours.
Resolve guest complaints, ensuring guest satisfaction.
Maintain knowledge of the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.
Open and serve wine/champagne bottles.
Order supplies through the Purchasing Software System.
Maintain complete knowledge of Point of Sales System and manual systems.
Eliminate waste by supervising employees on pour levels, proper storage, etc.
Maintain appropriate beverage cost by managing purchasing and requisitions.
Train employees on wine and beverage service and knowledge.
Enforce proper beverage service standards of all employees during service.
Maintain clean, error-free wine lists by constantly updating and reprinting.
Taste and evaluate wines and other beverages for potential purchase.
Maintain a level of professionalism that will make guests want to return to the restaurant.
Anticipate the guests’ needs and respond appropriately with a sense of urgency.
Work as a team member, assisting all guests’ and employees’ needs and inquiries.
Effectively communicate with management, chefs and culinary staff in order to fulfill and address any issues or needs requested by guests and or other employees.
Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
Maintain complete knowledge of correct maintenance and use of equipment.
Anticipate guests’ needs, respond promptly and acknowledge all guests, however busy and whatever time of day.
Maintain positive guest relations at all times.
Knowledge of all Hotel services/features and local attractions/activities to respond to guest inquiries accurately.
Monitor and maintain cleanliness, sanitation and organization of assigned work areas.
Tables, service areas and outlet itself.
Maintain complete knowledge of all menu items, liquor brands, beers and non-alcoholic selections available in the assigned outlet.
Complete knowledge of designated glassware and garnishes for each drink.
Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting service to minors, intoxicated persons and drunk driving.
Maintain complete knowledge of table/seat/station numbers, proper table set ups, room capacity, hours of operation, menus, price range and dress code of assigned outlet.
Inspect cleanliness and condition of assigned station and service areas; rectify any deficiencies.
Greet guests and take their orders, utilizing suggestive/up-selling techniques.
Input orders into system and ensure transmission is verified by Bartender/Kitchen.
Retrieve orders from designated areas and serve to guests.
Extend courteous salutations when guests leave outlet and invite them to return.
Performs all other job related duties as requested.
JOB REQUIREMENTS:
Required:
At least 4 years of service experience in a similar dining environment.
Working knowledge of wines, other beverages and their proper service.
Working knowledge of Point of Sales Systems and operations.
Working knowledge of health and safety regulations.
Excellent customer service skills.
Have interpersonal skills to deal effectively with all business contacts.
Professional appearance and demeanor.
Work varied shifts, including weekends and holidays.
Completion of Court of Master Sommeliers Introductory Course.
High School diploma or equivalent.
Able to effectively communicate in English, in both written and oral forms.
Preferred:
Advanced Diploma or Master Sommelier Diploma from Court of Master Sommeliers highly.
Previous experience working in a similar resort setting.
