  • Provide leadership and supervise service in gourmet dining rooms.
  • Create daily floor plans per shift to ensure proper rotation and coverage of stations.
  • Review and approve staffing, schedules and vacations.
  • Train and coach employees in the performance of their duties and support Company initiatives.
  • Discipline or commend employees following departmental rules and complying with the Culinary Collective Bargaining Agreement.
  • Manage all related employee records and FileNet.
  • Ensure compliance with policies and procedures including the Health Department and Fire Marshall Regulations.
  • Ensure accuracy on all reservations and direct staff accordingly to satisfy special guest needs.
  • Analyze financial reports, including P& L statements, to identify and implement cost-cutting measures and initiatives.
  • Utilize Spotfire software to maximize sales and profits, manage daily labor and other operating expenses.
  • Manage POS pricing/maintenance issues to ensure checks can be processed correctly.
  • Inspect the food coming from support departments to ensure freshness and quality.
  • Maintain direct communication with Special Events dining team and guests for special requests and large party reservations.
  • Order supplies through the IP System and Purchasing.
  • Ensure all dining rooms are in accordance with the 5 Star/5 Diamond Maintenance Program, to include carpet, walls, light bulbs, windows and overall general cleanliness.
  • Other job related duties as requested.

  • At least 4 years of service experience in a similar environment.
  • At least 2 years of supervisory experience.
  • At least 1 year of F&B management experience in a similar environment.
  • Previous experience managing employees under a culinary bargaining agreement.
  • Knowledge of all beverage and wine products, service, menu items and equipment used to perform these duties.
  • Working knowledge about all health and safety regulations.
  • Basic knowledge of kitchen operations.
  • Knowledge of POS systems.
  • Effective listening abilities and ability to make strong judgment calls.
  • Excellent organizational skills and attention to detail
  • Strong verbal & written communication skills.
  • Ability to work varied shifts, including weekends and holidays.
  • Interpersonal skills to effectively communicate with all business contacts.
  • Ability to effectively communicate in English, in both oral and written forms.
  • Excellent customer service skills.
  • Able to lead and mentor a team.
  • Have interpersonal skills to deal effectively with all business contacts.

  • High school diploma or equivalent.
  • Able to effectively communicate in English, in both written and oral forms. 
  • Bachelor’s degree
  • Previous experience working in a similar resort setting.
