Job Title:   Lead Cook
DDC - Sahuarita, AZ
Food & Beverage

Position Summary: 
Under direct supervision of the Back of House Supervisor, prepares food items according to the production sheet for the assigned area.

Essential Duties & Responsibilities:
  • Cooks a variety of foods in quantities according to the menu and number of patrons to be served.
  • Cleans vegetables and protein foods, dicing, chopping, slicing, saut
  • ing, grilling, deep fat frying or otherwise preparing food to customer specifications.
  • Follows standardized recipes when preparing dressings, sauces, or other
  • sub recipes.
  • Ensures sub recipes are done in a timely manner so that neither of the restaurants runs out of this item.
  • Requisitions supplies daily and maintain accurate records and accounts.
  • Directs activities to one or more workers assisting with preparing and serving meals.
  • Responsible for maintaining a clean work area and following all principles of safety and sanitation.
  • Performs any and all other reasonable duties as assigned such as dishwashing, cleaning pots and pans and mopping of floors, if needed.
  • Ensure line is ready by 11:00am daily.
  • Responsible to provide all condiments, sauces, or garnishments as required by the menu.
  • Cleans reach-in refrigerator.
  • Works according to established procedures of the Casino.
  • Maintains a good communication with co-workers and maintains a positive and professional work environment.
  • Contributes to a team effort and accomplishes related results as required.
  • Performs other duties as required.

Minimum Qualifications:
High School Diploma or GED plus two years as a cook; or equivalent combination of recent experience and education. Supervisory experience preferred. Must be able to obtain a Food Handlers Card. Must be at least 18 years of age. No felony, theft or stealing convictions. Must be able to successfully pass a pre-employment drug/alcohol screen, background investigation, obtain and maintain gaming license.

Knowledge, Abilities, Skills, and Certifications:
  • Knowledge of kitchen equipment and utensils maintenance operations.
  • Knowledge of safe practices in a kitchen working environment.
  • Ability to communicate, read, and write clearly in basic English.
  • Ability to demonstrate outstanding guest service at all times.
  • Ability to work in a busy, fast paced environment.
  • Ability to perform in a professional appearance and manner.
  • Ability to read and write.
  • Organizing and coordinating skills.
  • Ability to safely use cleaning equipment and supplies.
  • Ability to prepare a variety of food.
  • Ability to prepare and bake a variety of pastries, rolls and/or other baked goods.
  • Skill in cooking and preparing a variety of foods.
  • Knowledge of food preparation and presentation methods, techniques, and quality standards.
  • Ability to accept receipt of goods and supplies.
  • Ability to gather data, compile information, and prepare reports.

Physical Demands: 
While performing the duties of this job, the employee regularly is required to stand for extended periods; use hands to finger, handle, or feel; reach with hands and arms; and talk or hear. The employee frequently is required to walk. The employee occasionally is required to sit; and stoop, kneel, crouch, or crawl. The employee must regularly lift and/or move up to 50 pounds. 

Work Environment
Work is generally performed in the Casino's kitchen area with exposure to heat, fumes and steam. Evening, graveyard, holiday and/or weekend work are required. Extended hours and irregular shifts may be required.
