Job Description:

Responsible for the overall operation of the Food, Beverage and Retail    Departments including but not limited to:

  • Staff, train, schedule, motivate, manage, discipline, evaluate and counsel departmental employees
  • Develop and create opportunities to increase traffic into the property through the use of food and beverage incentives
  • Supervise, plan and direct daily activities of food and beverage managers
  • Develop and manage departmental operating costs
  • Ensure employees comply with all rules, regulations and procedures
  • Oversee the development of menus and ensure the quality of food and beverage quality and presentation
  • Ensure a safe working environment for all employees
  • Establishes departmental goals, policies and procedures
  • Hires management staff for FOH restaurants, Beverage and Executive Culinary positions
  • Orients and updates management staff on company policy and procedures
  • Holds management staff accountable for company and departmental policy and procedure
  • Ensures departmental compliance will all Clark County Health Department and departmental health and sanitation standards
  • Develops annual budgets that support corporate-wide financial objectives
  • Develops monthly forecasts that accurately predict expected business volumes
  • Represents the Food and Beverage department during monthly financial reviews
 
Job Requirements:
  • Four years of management experience in multi-unit front and back of house casino food operations
  • 2 years experience with casino beverage management
  • Bachelors degree in Food & Beverage, Hospitality Management or related field preferred
  • Associates degree in Culinary Arts or equivalent work experience preferred
  • An established reputation of being a dynamic and team oriented leader
  • Must be able to manage multiple priorities
  • Extensive product knowledge including relative pricing, pack sizes, quality, seasonality, usage and utilization of bovine, ovine, pork, fowl, produce, seafood, dry goods, dairy & bakery products
  • Computer skills including e-mail, word processing, spread sheets, time and attendance and inventory control
  • Comprehensive knowledge of Clark County Health Department regulations
  • HACCP or Serve Safe certification preferred
  • Professional level written and verbal communication skills with fluency in English
  • Calm and even personality
  • Thorough knowledge of multi-ethnic cuisines
  • Comprehensive wine and spirits knowledge
