Job Description:
This position will be responsible for the following duties: • Produce high quality food in flavor and presentation in Specialty Restaurants • Cooks and prepares all food tickets in a timely manner • Adheres to the specifications, standards and proper recipe production of high volume food items set forth by management • Utilizes ovens, slow cookers, grills, griddles, broilers, deep fryers, braisers, steam jacketed kettles, ranges, salamanders, steamers, combination ovens, electric slicers, knives, steam tables and other equipment for food preparation Essential: o Maintain consistency in plate presentation and flavor o Maintains productions, temperature and waste charts o Ensures that all menu items are maintained and consistently stocked and rotated o Stores all foods at correct temperatures o Dates and labels all food items using the day dot system o Uses knife skills to prepare raw ingredients o Utilizes ovens, slow cookers, grills, griddles, broilers, deep fryers, braisers, steam jacketed kettles, ranges, salamanders, steamers, combi-ovens, electric slicers, knives, steam tables and other equipment for ala carte food preparation o Prepares hot and cold food items to according to specifications o Maintains consistency in food presentation and flavor o Utilizes proper cooking techniques that ensure consistent production results o Stocks production area for efficient daily operation o Assists Sous Chefs in all areas of productions o Acts in a friendly and professional manner to guests and co workers o Maintains a clean, neat and sanitized work area o Sets up and stocks work station in a self motivated manner o Presents a professional, neat and clean appearance at all times o Cleans and organizes kitchen areas per instructions from Chefs, including storing incoming goods, sweeping, mopping and scrubbing o Assists with inventory and product requisitioning o Provides feedback to Chefs on quality of incoming goods o Reports product shortages, equipment issues and safety concerns to Chefs o Cook and prepare all food tickets in a timely manner, as dictated by the point of sale system o Communicates verbally orders to coworkers to insure that all food is presented at the same time o Assists Chefs with other tasks as assigned
 
Job Requirements:
Essential: o Must be self motivated o Has 2 years experience in high volume ala carte kitchen o Must have 1 year experience in a fine dining environment o Ability to learn at a fast pace and help train others o Has accurate high production knife skills and can follow cut spec’s to within 1/16” o Hot food production knowledge including roasting, sauté, broiling, deep frying, shallow frying, steaming, boiling, braising, large batch cookery, sauce production, soup production o Working knowledge of American, Italian and French food production techniques o Cold food production knowledge including but not limited to salads, fruit platters and dressings o Working knowledge of Clark County Health Department sanitation regulations o Must poses the basic culinary tools, i.e.: 10 ‘’ chef knife-spatula- tongs –carving knife- serrated knife –sharpening steel – o Culinary degree, culinary vocational school diploma or work experience equivalent to preferred o Must be fluent in verbal and written English o Exhibited passion for fine food and wine knowledge o Exposure to other high end dining environments
