Job Description:

 Is responsible for the maintenance and sanitation of all food service operations. Performs duties such as dishwashing, cleaning of all production equipment, floor cleaning and trash removal. Performs in a supervisor role over the kitchen utility staff. Monitors productivity and quality of work performed. Maintain the cleanliness of all F&B area to ACC and health department standards. 

ESSENTIAL DUTIES and RESPONSIBILITIES: (other duties may be assigned)

.  Actively works and supervises dish room and sanitation of complete back of house outlets. 

.  Ensures a safe environment for fellow Team Members. 

.  Wears appropriate uniform-white shirt & checkered pants, apron, hair net, slip resistant shoes, name 

   badge and gaming badge. 

.  Train all kitchen workers to properly and productively perform jobs according to job description. 

.  Use fair corrective disciplinary action. 

.  Train all kitchen workers on all aspects of safety by following ACC guidelines.

.  Teach, or arrange for instruction of, awareness of all chemicals used within the department.

.  Insures all ACC and food and beverage policies and procedures are followed. 

.  Schedules and trains employees on the use and care of equipment. 

.  Delegates duties and communicates to shift stewards extra assignments that need completion. 

.  Coordinates the scheduling for pest and bug elimination with the appropriate company contracted 

   with the ACC; and notifies managers of the same. 

.  Order all supplies necessary for completion of jobs. 

.  Knowledge of casino safety procedures to insure employee safety. 

.  May be required to assist with related duties at other affiliate properties at management discretion. 

.  Travel modes and accommodations for site visits are determined by management. 


Carries out supervisory responsibilities in accordance with the organization's policies, procedures and applicable laws. Responsibilities include training Team Members; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees per approved Casino policies; addressing complaints and resolving problems.

High school diploma or GED equivalent preferred. One year related experience and/or training; or equivalent combination of education and experience. LICENSES, CERTIFICATIONS and/or TESTING: Ability to obtain our Gaming License. Possess a Riverside County Department of Environmental Health Food Handlers Certificate or equivalent. OTHER SKILLS AND ABILITIES: Ability to read and interpret documents; chemical handling as per MSDS; ability to communicate effectively with others; understands and complies with all Company departmental rules and regulations. Must be able to lift 25-75 lbs.


To perform this job successfully, the individual must be able to stand, move and work throughout the

office area and properties, including walking up to 1 ½ mile, climbing stairs and sitting at a desk/work

station for the duration of the shift.  Also may be subjected to a smoke filled environment. Typically the individual will be housed in an office environment.  The noise level in the work environment is usually moderate, but will escalate when located in the casino environment.  Must be able to grasp, bend, lift and/or carry or otherwise move goods weighing a minimum of 25 lbs. on an intermittent basis, and sufficient dexterity of hand in order to use office equipment including, but not limited to:  a computer keyboard, calculator, general office equipment and multi-line telephone.
