Job Description:

JOB DESCRIPTION SUMMARY
Performs stewarding duties such as dishwashing, cleaning of equipment, floor cleaning, and trash removal as well as prepares food for the line and buffet production. Such prep pay include cold salads, meat trays, desserts, fruit and cheese trays, garnishes, and processing foodstuffs.
  
ESSENTIAL DUTIES AND RESPONSIBILITIES (other duties may be assigned)
• Prepares foodstuffs in large quantities while properly rotating and labeling.
• Assists Sous Chef with food set up for buffet production.
• Helps transport food and assists receiving in putting away food products.
• Ability to suggest and describe desserts.
• Maintains clean, safe and sanitary work area.
• Keeps all refrigerators, freezers, and dry storage areas organized and cleaned daily.
• Knowledge of correct operations of all kitchen equipment.
• If emergency arises, may be required to work in front of the house operations.

Job Requirements:

QUALIFICATION REQUIREMENTS EDUCATION and/or EXPERIENCE
Minimum of 1 year related experience. Minimum one year kitchen experience. 

Communicates effectively with others at all times; basic chemical awareness training; understands and complies with all company and departmental rules and regulations; basic knife skills; ability to follow all recipes.

Possess a Riverside County Department of Environmental Health Food Handlers Certificate or equivalent. Pass ACC test of culinary basics and dessert descriptions.

WORKING CONDITIONS/PHYSICAL DEMANDS
To perform this job successfully, the individual must me able to stand, move and work throughout the office area and properties, including walking up to 1 ½ mile, climbing stairs and sitting at a desk/work station for the duration of the shift.  Also may be subjected to a smoke filled environment. 
The noise level in the work environment is usually moderate, but will escalate when located in the casino environment.  Must be able to grasp, bend, lift and/or carry or otherwise move goods weighing a minimum of 25 lbs. on an intermittent basis, and sufficient dexterity of hand in order to use office equipment including, but not limited to:  a computer keyboard, calculator, general office equipment and multi-line telephone.
